Fruit
Dry mango at 55–60°C for 8 to 12 hours until leathery. Chaunsa and Sindhri hold their flavour best.
Dehydrate mango at 55–60°C for 8 to 12 hours, slicing it 5–6 mm thick and laying the pieces flat without overlap. It is ready when a torn slice is leathery and pliable with no wet centre. Stored airtight and away from light, dried mango keeps for 10 to 12 months.

Use fruit that is ripe but still firm. A mango that yields to a thumb has too much free sugar and will stay tacky no matter how long it runs.
Chaunsa and Sindhri are the varieties most worth drying here — both are sweet enough to concentrate well and firm enough to slice cleanly. Very fibrous varieties dry into strings.
Peel, then slice along the stone into 5–6 mm pieces. Thinner slices turn brittle and lose the chew that makes dried mango worth eating; thicker ones keep a wet core.
Lay the pieces flat on the trays with a little space between them. Overlapping slices trap moisture and dry unevenly, which is the most common reason a batch fails.
Set the dehydrator to 55–60°C and run it for 8 hours before checking.
Rotate the trays once around the halfway point. Even in a well-designed cabinet the trays nearest the fan finish first.
From 8 hours on, check hourly. Total time depends on slice thickness and how ripe the fruit was, so treat 12 hours as an outer bound rather than a target.
Let the slices cool to room temperature before packing. Sealing them warm traps steam, and that is what causes mould in an otherwise good batch.
Store airtight, away from light. Ten to twelve months is realistic; the fruit stays safe well beyond that but the flavour flattens.
Dried mango is mostly eaten as it is. It also blends into a powder that works in yoghurt, and rehydrates well enough for chutneys and cooked dishes.
Tacky after 12 hours: the slices were too thick or the fruit was overripe. Give it more time at the same temperature rather than raising the heat.
Hard and brittle: dried too long or sliced too thin. Still perfectly good — grind it into powder.
Darkened edges: normal caramelisation, not spoilage. A brief lemon-water dip before drying reduces it.
Chaunsa and Sindhri are the usual choices: both are sweet enough to concentrate well and firm enough to slice cleanly. Very fibrous varieties dry into strings rather than slices.
No. Mango browns far less than apple or banana, so a lemon-water dip is optional. Use one only if you want the brightest possible colour.
Tear a thick slice in half. It should be leathery and pliable with no wet centre. If it feels tacky and cool, it needs another hour.
